For those of you that know me, you will know that nothing terrifies me more than routine. The thought of waking up, getting the kids off to school, getting to the office, punching the clock, pick-ups, dinner then bedtime on repeat gives me anxiety. Which is why we have become somewhat nomadic (5 moves in 5 years and over 40,000km in road trips in the last year).
Well folks, I’m sitting here feeling pretty domesticated because it’s been two weeks since our last adventure, and we have nothing planned! And I’m doing ok! My sense of adventure hasn’t dwindled, but my love of home has definitely increased. Sitting down tonight in a cozy house, planning meals for next week, sharing this passion with you feels like a gift. So thank you for reading, following along, asking questions, eating my meals, and inspiring me to continue on.
This gives me an elevated sense of purpose and I couldn’t do it without your love. So here are next weeks meals I’ve planned for you. I was on an Oh She Glows Every Day kick so most recipes are from this most cherished of cookbooks:
- Tofu Poke bowl – Adapted from Feasting at home. This is one of my favourite meals. and always popular. The marinated tofu lights this dish UP along with a plethora of fresh veggies on a bed of brown rice and topped with homemade (sugar free) ponzu sauce.
- Baja Bowls with Lentil-Walnut taco meat – adapted from the Oh She Glows Ultimate green taco wraps. Lettuce wraps are never pretty to eat outside of your own home so I have re-porposed this into a bowl. Romaine lettuce, chopped fresh veggies, avocado and cashew sour cream. Best slathered in hot sauce.
- Sweet Potato Chickpea and Spinach Coconut Curry – Coconut is my spirit
animalfood. I eat it is some way shape or form every day. I pair this sweet and not too spicy curry with quinoa for a complete vegan protein. - Every Day Glow Salad – Because what meal plan isn’t complete with a big-a** salad right? Not fancy, but always delicious, especially when someone makes it with love.
